Because you have to. You can't burn crude in an engine. Crude is a mixture of lots of different hydrocarbons. When it is refined these different hydrocarbons are separated into gasoline, diesel, kerosene, etc....
These different components have different flash points and they have to be separated to serve in their desired purpose.
