or at least i presume they are oil refineries, they do something with oil!

These are called Flare Stacks.





In refineries, they burn off excess gasses from pressure relief valves to protect refinery equipment. If the pressure is normal in the system, they are not burning.





They can also be used to burn off waste gas, but this has been extremely limited in the last few decades due to the pollution. Now days, waste gas is normally stored and sold by highly dilluting it into the natural gas supply.

If these flares weren't there, we would have large environmental impacts due to the release of hydrocarbons. There are also safety impacts. You wouldn't want large quantities of flammable vapors building up in the area.





Safety valves are connected to flares but they are not always the only reason a flare is constructed.
